Faraona al vino rosso ed un nuovo Speciale



E' ora di cominciare a pensare al Menu' di Natale: che ne dite?
Io naturalmente lo sto facendo e tra un aperitivo ed un antipasto il dubbio rimane sempre su cosa preparare per secondo: un arrosto, uno stracotto, un brasato o un bel pennuto ruspante, magari da farcire con ripieni tipici natalizi a base di frutta secca e carni miste?
Non so voi, ma questa che vado a raccontarvi è una delle ricette che più mi piace fare quando la mia mitica Jolanda, fornitrice ufficiale di carni e prodotti agricoli, mi tiene da parte una delle sue faraone. La faraona al vino rosso è un piatto davvero delizioso, ideale per la tavola di Natale o tavole in festa in generale: il vino è l'ingrediente principale che si sposa perfettamente con la carne bianca e leggera della faraona.

FARAONA AL VINO ROSSO
dosi per 6 persone

1 faraona
2 cipolle
50g pancetta
40g burro
2 cucchiai di olio
20g di funghi secchi
100cl vino rosso
100g salsiccia
noce moscata
farina
limone
sale
pepe

Taglia la faraona a pezzi e lava i pezzi in acqua e limone
Asciugali con lo scottex e infarinali bene
Scalda 30g di burro con l'olio, la pancetta e le cipolle tritate in una larga padella
Fai rosolare i pezzi nell'intingolo per 15 minuti circa, poi aggiusta di sale e pepe ed una grattata di noce moscata
Bagna con il vino, copri e lascia cuocere a fuoco basso per 1 ora
Al termine togli la carne e fai riposare
Diluisci il fondo di cottura con un po' di acqua tiepida, unisci i funghi ammollati e strizzati, la salsiccia sminuzzata, il burro avanzato e fai cuocere 20 minuti
Servi la faraona con la salsa ottenuta


Visto il periodo natalizio, si presuppone ci siano più visite in cerca di ricette da un po' tutte le parti del mondo, quindi ho deciso di tradurre questo post anche in inglese.

I don’t know about you, but the following is one of the dishes I like cooking when the legendary Yolanda, my official supplier for meat and agricultural products, sets aside one of his guinea-fowls for me.

The guinea-fowl cooked with red wine is a very delicious dish, perfect for the Christmas menu or general party menus: wine is the main ingredient, for it matches perfectly with the fowl’s white and light meat.

GUINEA-FOWL COOKED IN RED WINE


make 6 portions

1 guinea fowl
2 onions
50g bacon
40g butter
2 tablespoons of oil
20g of dried mushrooms
100cl red wine
100g sausage
a pinch of nutmeg
flour
lemon
salt
pepper

Chop the guinea fowl into pieces and wash them in water and lemon
Dry them with paper towel and cover them in flour
Warm 30g butter with olive oil , bacon and chopped onions in a large pan
Brown the meat pieces in this sauce for about 15 minutes , then add salt and pepper and a pinch of nutmeg
Pour the wine inside the pan, cover and cook on low heat for 1 hour
Eventually remove the meat and let it stand
In the same large pan, dilute the remaining  juices with a bit ' of warm water; then add the mushrooms , already soaked and drained, the chopped sausage , and the butter advanced
Cook the mixture for 20 minutes
Serve the guinea-fowl with this very particular sauce
